ascatelli, Italian for "waterfalls" is the newest pasta shape created by the pasta artisans at Sfoglini with James Beard Award winner, Dan Pashman of the podcast, The Sporkful. The Cascatelli shape is designed to maximize the three qualities:
- Sauceability: How readily sauce adheres to the shape
- Forkability: How easy it is to get the shape on your fork and keep it there
- Toothsinkability: How satisfying it is to sink your teeth into it
Cook 3-17 minutes in generously salted water.
