This flour is exceptional in that we oversee all facets of its production encompassing polishing of the short grain rice, cold roll milling, and packaging. We mill our flour from pure, unadulterated sweet rice - there are absolutely no additives. Additionally, our flour is gluten-free, certified kosher by KSA, and naturally low in sodium. Blue Star Mochiko is suitable for individuals on gluten-free lifestyles as our facilities are dedicated to rice processing. While Blue Star Mochiko is traditionally popular for Japanese homemade mochi, manju, chi-chi-dango, senbei and other dishes, it is also used in Korean confections, Filipino bibingka-style confections, and certain Chinese dim sum. Do not eat raw. Storage Suggestions: Like other flours, Blue Star Mochiko greatly benefits from being stored in a cool, dry area, away from heat and direct sunlight. Please note its delicate flavor will be adversely impacted by storage in close proximity with materials having strong odors. Fresh Blue Star Mochiko upon procurement can be double bagged in plastic and stashed in the fridge or freezer. After opening, keep cool and dry in a sealed container.
