Hatch chile, is grown in the Hatch Valley of New Mexico. Located in the middle of the Rio Grande agricultural area. Hatch declared itself to be the ‘Chile Capital of the World’. Hatch's unique combination of high altitude, sandy soil conditions, and long, hot growing days produce quality chiles year after year. Hatch chiles are long & curved and turn a deep red color in the fall. They are dried under the hot southern New Mexico sun and are the best chiles you can get.
