Indonesian Cassia Cinnamon is cultivated in Java and Sumatra, are spicy, smells pretty strong with pleasant flavor and has smooth taste and sometimes bitter. The pungency is somewhere in between Chinese and Vietnamese, and stronger than Ceylon Cinnamon. It has 2-3% oil content.
Indonesian Cassia Cinnamon is the most familiar cinnamon. Use in coffee, tea and any other beverage you desire a sweet, warm flavor. Ideal for cookies, apple pie, pancakes, French toast, muffins, and also spice rubs for chicken and meat.
